Lean, sliced thin, over a sweet potato base with a charred vegetable and a quick chimichurri — that's complete carbs, complete protein, anti-inflammatory herbs, all under 750 calories. You'll feel like a different person the next morning.

Method

    Roast the sweet potato while you change

    Preheat oven to 425°F. Prick the sweet potato all over with a fork. Place on a sheet pan. Roast 25 minutes until completely soft when squeezed (use a towel). Comes out around the same time everything else is done.

    Make the chimichurri (5 minutes)

    In a small bowl, combine parsley, cilantro, garlic, red wine vinegar, 1 tbsp olive oil, red pepper flakes, juice from the lemon half, and ½ tsp salt. Stir, taste, adjust. Let sit while you cook everything else — it gets better.

    Sear the steak

    Pat the strip steak dry. Salt heavily. Heat the cast iron over medium-high until ripping hot (2-3 minutes). Add ½ tbsp olive oil. Lay the steak in, don't move it for 2 minutes. Flip, 2 more minutes. Pull at 125°F for medium-rare (130°F after the 5-minute rest).

    Char the broccolini in the steak pan

    While the steak rests, drop the heat to medium. Add the broccolini to the still-hot pan with the steak fat. Toss to coat. Salt. Let it sit untouched 90 seconds — you want char marks. Toss, cook 2 more minutes until crisp-tender.

    Plate the bowl

    Split the sweet potato open down the middle, fluff the inside with a fork. Slice the steak against the grain into thin slices. Pile the steak on top of the sweet potato, the broccolini next to it, drizzle chimichurri over everything. Squeeze a little more lemon. Eat within an hour of training.

Chef's Pro Tips

  • The 1-hour window after lifting is when your muscles are most insulin-sensitive — protein and carbs together right now have an outsized effect. Don't skip the sweet potato.
  • If you want to push the protein higher, top the bowl with a soft-boiled egg (+6g protein) or a small dollop of cottage cheese (+12g per ¼ cup).
  • The chimichurri keeps a week in the fridge. Make a double batch on Sunday for fast bowls all week.
  • Pasture-raised beef is naturally higher in CLA, omega-3s, and B vitamins than commodity beef. Post-workout, those compounds compound.
