Beef heart is one of those cuts that grandparents grew up eating and most people now have never tried. It's a working muscle — pure meat, no marbling, mild like a great filet but with deeper mineral notes. Method

    Trim the heart aggressively

    Place the heart on the board. With a sharp knife, slice away every bit of silver skin, white connective tissue, and any visible fat. The trim can lose you up to 30% of the weight — that's normal. What you're left with should be pure deep-red muscle.

    Chill the meat before chopping

    Place the trimmed heart in the freezer for 15 minutes. Slightly firmed meat chops cleaner. Pull just before chopping.

    Hand-chop, never grind

    Slice the heart into ¼-inch slabs. Cut the slabs into ¼-inch strips. Rotate 90°, cut the strips into ¼-inch dice. Don't pulse in a food processor and don't grind — the texture is the whole point. Hand-chopped tartare eats like little jewels; ground tartare eats like soft mush.

    Dress in a chilled bowl

    Move the chopped heart to a chilled bowl. Add the cornichons, capers, shallot, and a generous pinch of salt and pepper. Drizzle in the olive oil. Fold gently with a spoon — don't pack or press. Taste; adjust salt.

    Plate with the egg yolk

    Pile the tartare onto a chilled plate, building a low mound. Make a small well in the top with the back of a spoon. Crack a fresh egg yolk into the well — the visual is half the dish. Finish with flaky salt and a single grind of black pepper.

    Serve immediately

    Eat within 15 minutes of plating. At the table, fold the yolk into the meat with a fork — it becomes the binder. Strict carnivore: eat it straight. Everyone else: serve with grilled sourdough, mustard, and cornichons on the side.

Chef's Pro Tips

  • Beef heart is best eaten the day it's bought or pulled from the freezer. If you're nervous about raw, sear it 30 seconds per side in screaming hot tallow for 'tataki' style — outside seared, inside raw.
  • Don't use a food processor. The texture you're after is little hand-cut cubes that maintain their integrity. A grinder ruins it.
  • If your heart is from a younger animal, it'll be more tender. From an older animal, more flavorful. Both work — adjust the chop size accordingly.
  • Pair with a crisp dry martini if you're going classic, or sparkling water with lemon if you're going clean. Don't drown it.
