The Maillard reaction is the single most important chemistry lesson in cooking. Here's how to weaponize it.
What a crust actually is
When proteins and sugars on the surface of meat hit roughly 300°F+, they recombine into hundreds of new flavor compounds. That brown, savory, complex 'cooked' flavor we associate with great steak? That's the Maillard reaction. No Maillard, no crust, no great steak — just gray sad meat.
Cast iron is a heat battery
A cold pan, even a stainless one, will dump heat the second a cold steak hits it — and then you're trying to brown surface moisture instead of meat. Cast iron stores massive amounts of heat. Get it ripping hot — a drop of water should vaporize, not just sizzle — before the steak goes in. This is hotter than most home cooks dare to go.
Don't move it
Once the steak is in the pan, leave it alone for 90 seconds to 2 minutes. The reason a crust forms is sustained contact with hot metal. Every time you peek and move it, you're resetting the clock and cooling the contact patch.
Basting is the secret weapon
After the first flip, drop in butter, a few smashed garlic cloves, and a sprig of thyme. Tilt the pan and use a spoon to pour the foaming butter over the steak for the last 60-90 seconds. You're not adding flavor — you're adding flavor *while* the heat from the butter helps even out the surface cook and build a richer crust.
