Lesson 3 · Temperature, Time, and The Stall

225°F is law. The stall is a phenomenon. Texas crutch is a tool. Here's how to use all three.
225-250°F is the magic window
Most low-and-slow recipes target a smoker temperature of 225-250°F. Low enough that the connective tissue has time to convert to gelatin without the meat drying out. High enough that the cook completes in 'overnight + a half day' instead of 'a week.' Resist the urge to crank it higher to finish faster — you'll dry the meat out.
The stall is real and weird
Around 150-170°F internal, your brisket or pork shoulder will hit a wall. The temperature will stop rising. It might even drop a degree or two. You'll panic. Don't. This is the stall — moisture evaporating from the surface is cooling the meat at the same rate the smoker is heating it. It can last 4-6 hours. The meat is not done; it's just plateaued.
Texas crutch (the wrap)
Around 165°F internal — once you've built a good bark — you can wrap the meat in foil or butcher paper. This traps moisture and pushes through the stall in an hour or two instead of four. Butcher paper preserves bark texture better than foil. Some purists never wrap — they'll wait through the entire stall for maximum bark. Most working cooks wrap.
The done temps that matter
Brisket: 200-205°F internal AND a probe slides in like soft butter. Pork shoulder: 195-205°F internal, same probe test. Spare ribs: 195°F internal, meat pulled back from the bone tips. Chicken: 165°F at thickest part of breast. Internal temperature is necessary but not sufficient for the big cuts — always do the probe test.
