Lesson 5 · Slicing, Serving, and Saving Leftovers

A perfectly cooked brisket sliced wrong is still a sad brisket. Here's how to finish strong.

The brisket slicing rules

A whole brisket has two muscles — the flat (long, lean) and the point (thick, fatty), running in different grain directions. Separate them at the fat layer between. Slice the flat into pencil-thick slices across the grain (perpendicular to the long fibers). Cube the point into 1" chunks for burnt ends — or slice and serve.

Pulled pork (the easy part)

Two forks. Pull along the grain into shreds. Remove and discard any large fat pockets, but leave the rendered, melted fat that's pooled — that's flavor. Toss with a splash of the rendered juices from the wrap. Salt to taste at this stage if needed.

The board sauce moment

For brisket: a little of the rendered fat from the wrap, brushed on the slices as you serve. For pork: a thin-tangy vinegar sauce (Eastern Carolina style) cuts the richness. For ribs: a thin coat of sauce in the last 15 minutes on the smoker if you're saucing at all.

Leftovers are a gift

Brisket sliced and reheated gently in beef stock the next day is one of life's quiet pleasures. Pulled pork freezes beautifully in 1-pound vacuum bags for taco nights all month. Smoked chicken makes the best chicken salad you'll ever eat. Plan for leftovers; don't apologize for them.
